Homemade Red Pepper Sauce

Hello all!

 

This is a super easy dinner idea!  This dinner is geared towards getting your kiddos (or anyone really) to include additional nutrients in their day.  As we know, sometimes kiddos can be picky.  They get accustomed to the same things over and over and over again and as a parent it can be frustrating.  Why won't my kids eat veggies you ask?! Well, at times it's because of exposure.  If kiddos aren't used to seeing a variety and exploring a variety they aren't willing to try.  Other times, they just don't feel like it! haha!!

 

Even with my children being plant based eaters...at times they whine about eating a veggie if that's not what they really want at the moment.  This is where YOU can get creative in the kitchen!  Simple dishes like pasta can be an easy way to sneak in veggies, seeds and other things that your kiddos may not normally want to eat if they saw it by itself.

 

This recipe is easy and under 20 minutes to prepare!  You will need the following kitchen items:

Large pot 

high powered blender (ninja, nutri bullet etc.)

rubber spatula

wooden spoon

sharp knife

 

 

When mixing a sauce or even sometimes with my smoothies I don't chop things in small pieces.  You want to make sure you cut your ingredients in small enough chunks that they will mix down well.  This easy recipe is flavorful and kid approved!  I hope you will enjoy it as much as my kids did :-)

 

Red Pepper Pasta

 

Ingredients

1 small red pepper

1/4 organic yellow onion

1 bag pasta (we did garden noodles this time)

1/2-1 juice of lime ( I like lime so I added the juice of a whole lime)

1 tbsp dulse flakes

1/4 cup sunflower seeds

1 tsp pink salt

1 tsp cumin

1 tbsp nutritional yeast

1/4-1/2 cup of water

 

Directions

Boil water and add salt to flavor noodles.

 

Rough chop red pepper and onion (can leave large pieces) and add to blender cup.  Add all other ingredients to the cup.  

 

Add pasta to boiling water and allow to cook while stirring as needed. 

 

Blender ingredients and allow the cycle to complete (typically one minute).

 

Once pasta is fully cooked and extra water has been drained from pasta.  Add in red pepper sauce to pasta and toss.

 

Serve immediately!

 

Here is a picture of it plated...kinda already eaten but nonetheless plated! haha

 

 

Depending on the type of pasta, this dinner will be super jam packed with nutrients and your kiddos wouldn't know that it was healthy ;-)
